Sandwich Epiphany
I made myself a peanut butter and honey sandwich last night, and it suddenly hit me: Crystalized honey is actually pretty great! Maybe... you're gonna hate me for this... Maybe even better than regular honey?
- I can scoop it with a spoon.
- It's still soft enough to spread.
- It doesn't drip! No more honey on my table, no more honey on my hands, no more honey in my hair!
- The texture is a little bit grainier, but that's fine for my sandwich. Next to crunchy peanut butter, I don't even notice.
In short, it tastes like honey, but behaves like jam!
I regret all the times I've slowly decrystalized honey with a jar in a water bath. Never again! I can just keep the crystalized honey and use it.
I'll put it on my sandwiches. I'll add it to my tea. I'll give it to my toddler, so she can put it in her drinks. I'll eat it by the spoonful, when I'm in the mood for sweets. I know it might be wrong, but I'm in love with crystalized honey.
